My friend Taffy was talking about making biscuits and gravy, and she inspired me to bake these! Today I made a special treat, homemade biscuits and milk gravy. But I wanted to do something different, so with Valentine’s Day coming up and since homemade biscuits are baking with love, I used a heart cookie cutter to make the biscuits. The results were a big hit!
I have been making biscuits a long time and I don’t really measure, so I found you a recipe that closely matches what I make. The most important tips I can give you are that you may have to add a little extra flour to the dough to make it the right consistency, and make sure to not overwork the dough or your biscuits will be tough and not rise nicely. I also only bake them for 10 minutes, then turn off the oven and let them sit another 2 minutes. Cover the tops loosely with foil if they brown too much before the baking time is done.

To make the milk gravy:
4 tbsp. butter
4 tbsp. flour
Salt to taste
Pepper to taste
2 1/2 cups milk (I use 2% milk, but you can also use evaporated milk or half and half for richer gravy.)
Melt the butter in a saucepan over low heat. Blend in the flour to make a roux, then cook the roux over low heat until it is smooth and bubbly. Slowly stir in the milk. Heat to boiling on medium heat, stirring constantly, until the gravy boils one full minute to cook off the starch. Salt and Pepper to taste. Makes enough to serve 4 people.
