Make these easy Tuna Turnovers and Chipotle Cole Slaw and have Dinner in under 30 Minutes!

Dinner in 30 minutes?  I do amaze myself sometimes!  LOL.  Years ago I had seen this recipe on the can of a Pillsbury Biscuit and have made them ever since, varying the tuna with canned chicken for my kids.  Why do I love this?  It tastes great and it is easy to make, plus you probably have everything you need in your pantry or fridge already!

(these are the brands I used because I had them already, usually at a deal price with coupons)

Tuna Turnovers

Ingredients:

1 can of refrigerated dough for biscuits

1 can of Tuna or two packets of Tuna, well drained

Ranch dressing, about 1/2 cup more or less depending on your taste

Shredded cheese, about 1/2 cup to 3/4 cup

Directions:

In a bowl combine the (drained) tuna, the ranch dressing and the cheese until mixed well.  No set measures just what you prefer.  I also add dried red pepper flakes to give it a little kick.  Take a biscuit, flatten it out, put tuna mixture in the middle and fold over to close.  Use fork to seal the edges and make it fancy, and you are done.

Bake at 375° for 15-20 or until golden brown

Tada!  You can change this recipe around by using the newer flavored tunas, flavored mayo, different cheeses, or even use canned salmon, chicken or ham.  The variety is endless.

To make the Chipotle Cole Slaw that I saw in All You magazine.

Ingredients:

1 bag cabbage or you can shred a 1/2 head of cabbage

Mayonnaise

Lime – fresh lime juice is great!

Chipotle adobo sauce

Salt

Pepper

Sugar

Cilantro (optional)

(yeah that is a big can of chipotle peppers but that’s how we roll here in Phoenix ☺ Princess T)

Directions: 

In a bowl mix the cabbage with the mayo to the consistency your liking, the juice of 1/2 a lime if its a big lime and juicy with about 1-2 tablespoons of the adobe sauce from a can of chipotle peppers.  Salt and Pepper to taste, a pinch of sugar and chopped cilantro as garnish.

This again is to your liking, some like a little more zing so add more adobo sauce or more mayo, just play it by ear and taste buds.

Why do I love this?  Not only is it easy, but it’s common pantry goodies and things you can always score on the cheap with coupons = Win-Win!

I was done in 30 minutes and my hubby gave it 2 thumbs up!
