Late-Night Munchies: Homemade Nacho Cheese + Fresh Tortilla Chips

Why buy it?  Homemade Nacho Cheese is easy to make and tastes better than store bought.  Plus, you’ll look like a pro 😉 I like to serve with fresh tortilla chips and all the good stuff like beans, tomatoes, onions, sour cream and guacamole, but kids seem to just like the chips and cheese.

Things You’ll Need

  • 1 1/2 tbsp. butter 1/2 cup milk 1 tbsp. corn starch 1 oz. cream cheese 1 cup sharp cheddar cheese 1/2 tsp. hot  sauce , more or less to taste!1/2 tsp. chili powder Knife Cheese shredder Heavy saucepan Whisk

      Shred 1 cup of cheddar cheese and set aside OR use pre-shredded cheese like I do.  I prefer sharp cheddar but you could use any cheese that melts well: pepper jack, colby jack, etc.

      Cube 1 oz. cream cheese and set aside.

      Put saucepan on burner and turn on med-high.

      Add 1 1/2 tbsp. of butter and melt but don’t brown.

      Whisk in 1 tbsp. of corn starch and cook 30 seconds, stirring constantly

      Whisk 1/2 cup of milk into the saucepan, gradually

      Add cubed cream cheese to the saucepan and stir until smooth.

      Stir in shredded cheddar cheese and stir until smooth.

      Stir in 1/2 tsp. of chili powder.

      Pour the hot sauce into the saucepan and heat until bubbly.

      Serve nacho cheese hot.


2 cups canola or other vegetable oil
8 (6 inch) corn tortillas, quartered
Salt, to taste
1. Heat oil in a 10-inch skillet to 370 degrees. Drop triangles in hot oil, 8 at a time. Fry, turning chips once or twice, until they stop sizzling and turn golden brown, about 2 minutes. Remove with tongs or a slotted spoon and drain on a wire rack set over a shallow pan. Sprinkle with salt immediately.
