Fan Kendra’s Favorite Refrigerator Dough – Make rolls anytime (nice for the Holidays)!

This recipe comes from Fan Kendra, who says…
“It was given to me by a co worker probably 10-12 years ago. I attached a picture of my “acutal” copy. It looks like a recipe out of a very old Betty Crocker book.  I make these every holiday. My daughter loves them. I have made a batch and stretched it through the week making rolls, bread sticks and even cinnamon rolls. It’s fun to experiment! Feel free to share with your readers if you’d like.’


Fleischmann’s Yeast Coupon: $1/1 Fleischmann’s Jar or Strip Yeast, exp. 1/6/12 (SS 10/02/11) OR $.40/1 coupon printable (zip 20715)



Favorite Refrigerator Dough

Mix together:
2-1/4 cups lukewarm water and 1/2 cup milk
2/3 cups sugar
1 1/2 tsp salt



Crumble in 2-1/4 tsp granulated yeast and stir until yeast and sugar are dissolved


Add:
2 eggs
2/3 cup veg oil



Stir in with a spoon and then with your hands
1 1/3 cups potato flakes
7-7 1/2 cups gold medal flour.  Add enough flour until the dough is not sticky.



Knead dough on floured surface or board until smooth and elastic.

Cover dough with a dish towel and Place dough in fridge about 2hrs (to rise) before baking
Shape into rolls, loaf, etc. and place in buttered pan
Cover and let rise at room temperature until light (1-2 hours)
Bake at 400° 12-15 mins
(I actually dont let it rise that long-and it still turns out just fine)
