Cheddar Baked Chicken – An easy crowd pleaser

Cheddar Baked Chicken
Serves 6 (To serve just the King and I, I cut this recipe in half)
Preheat the oven to 350° F and make sure you have 6 thawed chicken breast halves

Ingredients: You will need 3 bowls.
In Bowl 1 combine: 1/2 cup flour (I use half whole wheat flour and half white flour), 1 tsp salt, 1 tsp black pepper, 1/4 tsp cayenne pepper (if you like it spicy), 1 tsp garlic powder
In Bowl 2 beat together: 1 egg and 1 tbsp milk (I also add a dash of Tabasco for a kick)
In Bowl 3 combine: 1 cup Shredded Cheddar, 1/2 Cup Italian Bread Crumbs, 1 cup Rice Krispies


Spray a medium baking dish with nonstick spray.  One at a time, dredge chicken into the flour mixture in Bowl 1 (coat well) and then dip into the egg  in Bowl 2 (make sure to coat well but don’t run off flour coating) and then press both sides into Bowl 3, making sure to get plenty of coating.  Arrange in the baking dish, and I sprinkle a little additional cheese/bread crumb/Rice Krispie coating on top, then drizzle 2 tablespoons of melted butter over the chicken.  Bake uncovered 30-35 minutes until coating is brown and juices are clear.  Do not overbake, the chicken will dry out.

You can change the cheese and the seasonings to make it different.  I sometimes use 1/2 tsp chili powder and cumin together, add some cilantro and cut back the garlic to 1/2 tsp and use Kraft Mexican cheese, and serve it with Spanish rice.  Sometimes I add a little Parmesan cheese (replace some of the breadcrumbs with Parmesan cheese) and add 1/2 tsp Italian seasoning cut back the garlic to 1/2 tsp and use Kraft Italian Blend cheese.
