Meatless Black Bean Burgers

Perfectly seasoned and satisfying, these burgers will not make you miss any flavor!  Who needs meat?  Black beans are full of protein and are very filling.  This would be a great meal for Lent, Meatless Monday, or any vegetarian meal.

Black Bean Burgers

Serves 4

Ingredients:

1 can black beans, drained

½ diced bell pepper

¼ diced red onion

½ tbs garlic

1 cup cooked brown rice

1 tbs chili powder

1 tbs cumin

⅓ cup bread crumbs

Pepper to taste, a bit of salt if you really think it needs it.  There is a lot of flavor in these already.

Your choice of cheese to top it, if you choose.

Hamburger buns or rolls

Your choices of condiments.  We used a bit of the vegetable mixture to top ours!

Directions:

Combine bell pepper, onion, and garlic in a food processor and pulse until finely chopped. In a large bowl, mash black beans with a fork or pastry cutter. Add vegetable mixture to black beans, followed by brown rice. Blend well with a spoon. Add in spices, mix in with your hands, and then form 4 patties. Place on a baking sheet. Bake on 350 for 10-15 minutes or cook in a medium skillet for 7 minutes each side. Add cheese on top the last minute of cooking.  Serve on a bun with your favorite toppings or condiments.  Serves 4.

Red Fish Blue Fish Dr. Seuss Cookies

Beginning with just five fish and continuing into flights of fancy, One Fish Two Fish Red Fish Blue Fish by Dr. Seuss celebrates how much fun imagination can be.  March 2 is Dr. Seuss’ birthday.  Many celebrate his birthday as a day of fun and literacy.  I know my daughter’s school is planning a whole afternoon of Dr. Seuss Birthday activities and food!  Check out these Red Fish, Blue Fish cookies inspired by one of Dr. Seuss’ most beloved books.

Red Fish Blue Fish Dr. Seuss Cookies

Makes 2 1/2 dozen

Cookie Ingredients:
3 C flour
1 tsp baking soda
1/2 tsp salt
1 C soft unsalted butter, softened to room temp
1 C granulated sugar
1 eggs

Icing Ingredients:

  • 4 egg whites
  • 2 C powder sugar
  • 1/2 tsp cream of tartar
  • 1 tsp vanilla

Other Supplies:

 

Cookie Directions:

– Cream the soft butter with the sugar until the combination is smooth (not grainy) to the touch.

-Add eggs.  Continue to mix to incorporate.

-Add the vanilla.  Continue mixing to incorporate.

-Sift the four, baking soda, and salt together.  Sifting makes the dough lighter.

-Add the dry mixture to the wet mixture.

-Continue mixing until all the ingredients are thoroughly combined.

-Form the dough into a ball and then wrap it in cling wrap, completely covering the entire dough ball tightly.

-Put in the refrigerator for at least 6 hours but better to let it sit overnight. Check to see if the dough is firm if you don’t leave it overnight.

-Preheat your oven to 325 degrees.

-Pull the cookie dough out of the refrigerator and sit it out to soften up a bit so you can roll it out, 5 minutes.

– Put flour out on the cutting board, rub flour on the rolling pin, and work some flour into
the dough if it is too sticky. (if needed).

-Roll the dough out on the cutting board 1/4 to 1/3 inch think, and using the cookie cutter begin to cut your cookies.

-Line the cookie sheet with parchment paper.

-Using a metal spatula move the cut cookies to the parchment lined cookiesheet.

-Bake at 325 degrees for 7-8 minutes. Check to see if the cookies are thoroughly baked, just beginning to brown.

-Take the cookies off of the cookie sheet after a minute of resting, and put on a wire rack to cool completely.

 

Royal Icing Directions:

Combine all ingredients except the colors into a standing mixing bowl.  MAKE SURE that your bowl and beater is clean.  ANY oil or grease will make your royal icing not combine and it will be ruined.  Once made, cover the bowls with plastic wrap to keep it from hardening while you are working with it, and I keep my filled bags in a ziploc bag.

Mix on medium speed until stiff peaks form

Icing the Fish:

Split the white icing into 4 clean bowls.  You will want more of the blue and red so distribute accordingly.

Leaving one bowl white, add the colors to the remaining bowls, red in one, blue in the other, and black in the last, and mix well till uniform.

Using the 2 piping bags, fill each bag with a bit of the white and black icing to make the eyes and put into a ziploc bag till they are used.  This keeps them from drying out and getting crusty.

To the red and blue icing, add 1 tsp-2 tsp of water to thin out the icing so it will flow but not be runny.

Pour icing into a squeeze bottle – one red, one blue

Outline the fish in black icing and let it sit 30 minutes to set up before filling in with the thin red or blue icing.  Let sit on a cookie sheet for 4 hours to dry completely.

Once dry!  Using your edible marker, add some shading to the top fin, the tips of the tails and the middle part of the fish.

Add a half smile and outline of the eyes

Add the flipper with some shading

Make the eyes:  Using the white icing, add a small dot for the fishes eye.  Allow that to dry for an hour so the black won’t bleed into it, then add a small black dot for the pupil.  Let dry for another hour before packaging.

Enjoy!  These will keep a week if stored in plastic ware.

Take the King Cake to another form when you make POPCORN.  Great snack for the parades, parties, and general “laissez les bon temps rouler” attitude that embodies the Mardi Gras fun and festivities.

Mardi Gras King Cake Popcorn

INGREDIENTS

8 cups plain popped popcorn (no butter or salt)

1/4 cup Wilton dark green chocolate melts

1/4 cup Wilton yellow chocolate melts

1/4 cup Wilton lavender chocolate melts

1/2 cup purple, green and yellow M&M’s

Dark green jimmies and Dark green jimmies

Gold sugar crystals

Lavender sugar crystals

King Cake Plastic Baby

DIRECTIONS

1.   Line a baking sheet with parchment paper. Lay the popcorn on the baking sheet, in a single layer and set aside.

2.  In a microwave safe bowl, add the green chocolate melts. Microwave for 45 seconds. Remove from the microwave and stir until melted and smooth.

3.  Drizzle the melted green chocolate on top of the popcorn. Before the chocolate hardens, drizzle the light green jimmies on top of the green chocolate.

4.  Add the yellow chocolate melts to a microwave safe bowl and microwave for 45 seconds.  Stir until completely melted and smooth.   Drizzle on top of the popcorn.  Before the chocolate hardens, sprinkle the dark green jimmies on top of the yellow chocolate.

5.   Sprinkle the green, yellow and purple M&M’s on top of the popcorn.   (I took the green and yellow ones from a regular bag of M&Ms. I purchased the purple ones at a party supply store).

6.  In a microwave safe bowl, add the lavender chocolate melts. Microwave for 45 seconds. Remove from the microwave and stir until melted and smooth.

7.   Drizzle the melted lavender chocolate all over the popcorn. Before the chocolate hardens, drizzle the gold  and purple sugar crystals on top.  Tuck the King Cake Baby into the mix somewhere.

8.  Place in the refrigerator and chill for 20 minutes to allow the chocolates to harden.

9.  Remove from refrigerator and break up into pieces.

10. ENJOY!!  

Yields: 8 cups

Store in an airtight container for up to 1 month, but you might want to eat it before Lent starts in case you give up sweets, because this stuff will be tempting.

Nutella Crescent Rolls – Valentine’s Day or Any Occasion

Nothing says I Love You quite like delicious and warm baked goods.  Make these for your Valentine, for yourself, for your co-workers, your neighbors — Just MAKE THEM, because they are SO GOOD!  Vary the sprinkles to customize for any and all occasions.

Valentine Nutella Crescent Rolls

INGREDIENTS
Pillsbury crescent rolls – 8 ct. canister
13 oz jar of Nutella
2 cups powdered sugar
2 tablespoons cold milk or cream
1/2 teaspoon vanilla extract
Valentine sprinkles

DIRECTIONS
1.   Preheat oven to 375° F. Line a cookie sheet with parchment paper and set to the side.

2.   Keep refrigerated till ready to use the dough.  Separate the crescent rolls into triangles per the directions on the package.

3.   Generously spread 2 Tablespoons of Nutella onto each triangle and then roll each one up, beginning with the wide end of each triangle.

4.   Place on the parchment lined cookie sheet, at least 2 inches apart from each other.

5.   Bake for 10 to 12 minutes or until the crescents turn light golden brown in color.  Do NOT over bake.  Cool a minute or two on the tray before icing.

6.   While the crescents are baking, make the icing glaze. Put the powdered sugar in a mixing bowl.  To the powdered sugar, add the milk and vanilla.  Mix until a thick glaze forms.  You may need a tiny bit more milk to get the consistency to drizzle with.

7.   While the crescents are still a bit warm, drizzle the icing glaze generously over each crescent roll and then sprinkle with the Valentine sprinkles.

8.   ENJOY!!  Yield 8 Nutella crescent rolls.  Once cooled, store in covered plastic ware in the fridge up to 2 days.

UPDATED 2/17 — Sargento has expanded the recall and also announced the termination of its relationship with the company who supplied the affected cheese.  CLICK HERE to see the full list and all the information from Sargento regarding this recall.

Sargento Foods Inc. is recalling a specialty Longhorn Colby cheese after discovering a potential contamination of Listeria monocytogenes from one of their suppliers.  No illnesses have been reported.  These products were packaged at the Sargento Plymouth, Wis. facility.

Consumers can get more information and check to see if their product is affected by the recall by visiting info.sargento.com and using the “Product Check” tool.  This webpage will be kept updated with the latest information about the recall. Consumers can also call Sargento Consumer Affairs at 1-800-243-3737 between 9 a.m. and 4 p.m. (Central Time), or submit questions to the “Contact Us” page at sargento.com.

The affected retail products are listed on their site and the page includes a search by UPC to check all your products.

Boozy Chocolate Covered Strawberries

Ingredients:
2 pints of large ripe strawberries (some for making and some for munching on while you work)
1 cup Ghiradellhi chocolate
1 cup Chardonnay
20 plastic pipette tubes for infusion
Red and pink chocolate candy melts

Directions:
Wash and dry your strawberries.  Pat dry and let them air dry awhile.  Water and chocolate don’t mix.
Place your strawberries on a baking pan lined with parchment paper.
Take your pipettes and add your wine of choice.  Insert one into each strawberry.
Let sit until all the wine has been absorbed into the strawberry, at least 20 minutes.
Begin to melt your chocolate:
Using a double boiler, fill the bottom pot 2/3 of the way with water and bring to a boil on medium heat.
Place the second pot onto of the first one.  You want the water to touch the bottom of the top pan.
Reduce heat to low.
Add your chocolate to the second boiler.
Stir to melt, making sure to not let it get too hot.  However, you want the chocolate to be good and warm.  Cold chocolate will streak and dry dull.  TO make it be pretty, make sure your chocolate is fully melted for a few minutes.
Dip each strawberry into the chocolate, covering 3/4 of the strawberry.
Place the strawberry back on the baking sheet and to allow to harden.
Begin to melt the the pink and red wafers.
Drizzle the various chocolate colors on your berries for a classy look.  I use a butter knife for the drizzling.
Enjoy!  Store these in the fridge for up to 2 days.
